I'm having Coconut Rice Salad with Mango, Bell Pepper, and Lime. Now, true, I said I was having it last night, but it was so much work I had to quit and go to bed! I'm finishing it today for dinner.
Also, I decided I wanted to change the recipe around. I am adding shrimp, so they were marinated in raspberry jalopeno jelly and then roasted for a short time.
Also decided I didn't want lentils in the salad, so took them out.
Today I bought fresh coriander and coconut for it, as the freshness of the stuff I had yesterday wasn't up to par.
Finally, what a delight, a dear friend just brought over a loaf of sourdough bread that she baked this afternoon! She got starter mix from another friend and this is the third time she's baked it. Until now, she wasn't happy with her results. I wish the RG was here to have a fresh slice with me, but he will not be returning until tomorrow from the Fancy Food Show in SF.
My friend says sourdough stays fresh a long time, though.

Also a fair amount of work to prepare.

My hubby came home from the Italian grocery with a bag full of these things that look like a big bagel, flat, and toasted crisp. You are supposed to use them for soup. (I reckon to dip in and soak up the broth). I forget what they're called.
