What's for Dinner, Thurs., Jan. 18, 2018

Pork roast sammiches on brioche bread. Coriander pesto, lettuce, tomato, and onion.

Really interesting side dish made by the RG using my roasted peppers: he sauteed an eggplant and added some garbanzos. Then he mixed in the pepper sauce that he made with the roasted peppers.

Cucumber salad with red onion, minced parsley, and sour cream.

Earlier in the day we had sushi, and I had to rush off to work without finishing mine, so I'd like to have one or two pieces as an appetizer tonight.

If we have dessert, it will be chopped cantalope, red grapes, and apple. Ginger tea.

Instead of wine, we're having Dos Equis.

fruit and two fun size peanut butter snickers and on Pamela's gluten free pecan sandy. I had some apple cider too. I went grocery shopping so quick dinner.

there was Giant Eagle's recipe. Apparently a lot of people in the northeast like this.

Qty. 1 Giant Eagle rotisserie chicken, chilled.
1 cup Giant Eagle mayonnaise.
2-1/2 Tbsp. Giant Eagle lemon juice.
2 oz. package sliced almonds, toasted.
1/2 cup yellow onion, diced.
1/4 cup fresh parsley, chopped.
1 tsp. Market District lemon pepper seasoning.

A corned beef spoke to my husband as he was walking by earlier, so here it was that with cabbage, potatoes and green beans. As the temperature plummeted outside.

Tonight was simple as it's been a work week from hell. I made bean and cheese tacos with a side of spanish rice and with sliced avocado and salsa! I bought some fresh corn tortillas from our local food truck down the street, they are thick and Delicious!
