What's for Dinner, Tues., Jan. 16, 2018

Tossed green salad with carrots, cucumbers, scallions, cherry tomatoes, and peppers.

Shrimp with grits. Being a northerner all my life, I am somewhat unfamiliar with this dish, but the RG has southern origins and he wants to fix them that way. He did it once before and it was really, really good, so I said "OK!!"

Never heard of such a thing to favorite dish in one meal.

Tonight's menu is still hunt and hope.

3. Stir Fried Bok Choy& Mushrooms.

Kung Bao Tofu over brown jasmine rice. The Kung Bao sauce is from a mix & I really tried to adapt & learn to enjoy brown rice...Brown Rice isn't for me.🍚

8. I am sort of suprised @ the Bok Choy & Mushroom stir fry was so good.

I used 4 large white button mushrooms, quartered, 3 Bok Choy pieces sliced bite sized pieces stir fried in sesame oil
Stir fried garlic in the sesame oil~2 min, added the bok choy, then mushrooms, covered, stirred occasionally over 5 min. Added the oyster sauce, stirred to coat, sprinkled red pepper flakes over the mix. The textures of the mushrooms& the greens complimented each other.

Roasting potatoes with sea salt, pepper & garlic. Roasted heirloom carrots with sea salt and pepper, both tossed in olive oil. Pan grilled boneless pork chops with a quick mustard butter sauce.

5. I love the house of blues version..only I don't fry the grit cakes...bake them. Sounds like a lovely

My taste buds are weird from this terrible cold I'm recovering from, and this just sounded so fresh and clean.

10. All of my kids are sick...we have been to the doctor multiple times. I was lucky.

I had something at Thanksgiving but it went away after a few days. I love egg salad...and after working on pipes and the electricity on my new house all day...and an hour drive to and fro...I was beat. Easy yummy meal. I hope you feel better soon. One thing that helps me is to take extra vitamin C and I use Theraflu too for relief of symptoms (the kind with guaifenesin) Also, I take at least 1000 sometime 1500 doses of vitamin C when I am ill...any excess is excreted. Eat something so it doesn't hurt your stomach. I take 500 all the time. I had my flu shot this year too.

Again, I hope you feel better. Please don't fool around with this...my middle daughter had a nasty sinus infection because of the flu...the doctor said she was almost septic base on her blood work. And some of my friends have pneumonia. Good luck and here is to an immediate recovery!
