What's for dinner where you are?

(47,675 posts)It's Friday. My wife has worked her ass off all week. I may just take her out for a beer while they cook the pizza and bring it back for the kids. I've only got two in the house at the moment, so one extra large will feed everyone, leaving a slice each for my wife and I.
Kids can fuckin' EAT!!!!
On Edit: the place we would go has a wicked eggplant pizza.

(6,581 posts)I finally found them yesterday -- despite being frozen since late July, they looked good -- I had them in two ziplocks with quite a bit of water, so that they would freeze into the ice, which helps prevent freezer burn.
I dressed them in seasoned flour and crumbs last night and fried them. Tonight, I'm going to warm them up and make some kind of a quick sauce to go over them, either something fruit based or gravy/cream sauce. And, I cleaned some strawberries and threw a package of peas in the fridge to thaw, plus I'll throw a couple of potatoes in the microwave. It will work.
Quail, fwiw, taste exactly like chicken, at least they do if you raise them on the same diet chickens are fed on, a high protein poultry feed. But, only only get about 4 good bites of meat on each one.

(22,156 posts)It's from an old cookbook "The Art of Vegetarian Cooking" by Betty Wason. My Uncle gave me his paperback copy when I was in college . It's falling apart and my Uncle passed away in 1985. He was following the Seventh Day Adventists and therefore, a vegetarian.
SPLIT PEA SAUSAGES
1 1/2 c dry split peas or yellow split peas.
2 c cold water
1/2 c. minced onion
1 t oil
1 T low sodium soy sauce
dried sage to taste
salt and pepper to taste
1 egg, beaten and enough water to make a wash
breadcrumbs, seasoned works, but I like to taste the sage in the croquettes so I use plain
butter or oil to saute the croquettes, or just spray a non-stick pan/griddle
Sort and rinse the split peas. Cover with cold water and bring to a boil, then simmer until peas are soft enough to mash. Drain.
Meanwhile, saute the onion in the oil until soft. Mash the peas and mix with all the remaining ingredients. Allow to cool, until cool enough to form croquettes, whatever size you want to make them. You can put them in the fridge at this point.
Make a wash with egg and water. Dip the croquette in the egg wash and then in the breadcrumbs and saute until brown.

(22,156 posts)One of the best things about our group is getting new ideas for meals. I am so burned out of planning the weekly menu and shopping.

(32,086 posts)Bi-Lo had a buy-4-Fuelperks deal for certain Kraft products. One of the things in the deal was the new "Fresh Takes" cheese and breadcrumbs coating mix. I had a coupon and pack of boneless chicken breast slices in the freezer. There was more mix than I had chicken, so I coated the zucchini slices with it, too, It was a tad salty. Not bad if you can get it for next to nothing, but one can just as easily mix bread crumbs, cheese and seasonings for less than this stuff costs off sale.
