What's for Dinner, Sun., Dec. 24, 2017

I am going to my friend's house for Christmas Eve dinner, as the RG is on his annual Switzerland vacation. She doesn't cook much, but she is a good cook when she does. It's a seafood dinner, and her crab cakes are fabulous. I am looking forward to them.

I am making roasted beet salad with candied pecans and feta cheese over greens. I made a marinade of olive oil and orange peel for the beets.

This is the friend with the Harry Potter house, so lots of atmosphere, plenty of laughs, and possible ice on the short drive home (about 8 blocks up a mountain). Glad I have good tires.

We do NOTHING tonight except relax and chat with family and whatever friends come by. At some point we'll all put in our preferences for Chinese takeout and then share. Tomorrow morning it's about the children, coffee drinks, and lavish, easy breakfast eats for anyone who's hungry in the kitchen as the floor disappears under wrapping paper and ribbons.

3. Steamer clams

aka - "soft shell" or Ipswich. I'll put in some spuds and corn-on-the-cob in the pot before the clams. I bought 6 pounds of clams for 2 people, hope it's enough...

Not much happening on Christmas eve here - we did away with the 7-fishes some years ago. Tomorrow we have reservations for (yet another) seafood restaurant. Gawd help my cholesterol...

4. Turkey dinner

Turkey breast (roasted a couple of days ago, we were ill and didn't eat much)
Stuffing
Green beans cooked with some ham
Mashed white potatoes
Sweet potato casserole - it was too sweet, I think it will be dessert as a leftover.
Pan drippings gravy, very savory this time with extra thyme and sage.

Too low energy to make dinner rolls this time. This is the first full meal I've eaten in a week.

Twice-breaded with egg & spicy bread crumbs.

Steamed broccoli and baked beans.

We still have a couple of Klondike Bars...

6. I made crumpets!

Husband decided we should try them...possibly because we've become immersed in British TV shows, and crumpets sound about as British as you can get. So we ordered the little rings and I used David Lebovitz's recipe. Not bad; we had them with black raspberry jam and European butter.

Pierogis (made ahead) and borscht are staples; other appetizers like deviled eggs and shrimp with cocktail sauce (homemade, so as to have the proper amount of horseradish, which is a lot) appear every year; newcomers this year were smoked trout spread, brie with sweet/hot pepper relish is phyllo cups, and pickled vegetables. Dessert was individual cheesecakes, cooked in the Instant Pot (nice presentation and could do ahead).
