Any vegetarians here?

I was recently cutting back on meat consumption but after I got sick the last few times I ate meat, my body is telling me to give it up.

Any good recipe suggestions for meatless meals. (I do eat eggs and dairy).

so many way to eat w/o meat that it is difficult to offer suggestions....

I made a good casserole for Thanksgiving that is loosely based on Native American Pemmican (survival food with dried meat and fat)

I made it with wild rice, nuts, dried fruit and a few savory spices... pressed it in pan, baked and served with gravy (oil or butter, thickener and milk- seasoned with salt and pepper)

inspired by your recipe at Thanksgiving. Using lentils instead of the rice.

Some will have the roast pork tenderloin and others will have this.

I'm choosing lentils, rice&beans, fish and tofu as a regular meal choices. I am learning.

along with veggies and cheese.

One of my favorite meals that is quick is re-fried beans wrapped in tortilla's with cheese. I'll usually make a side "salad" of avocado, grape tomato's topped with sour cream. I do this quite a bit since I am now only cooking for one. I can make a good pot of beans mashed last a few weeks in the fridge.

I also will do a baked potato and top it with steamed broccoli and cheese and have a nice side salad and garlic bread.

Most of my stuff is easy.
