What's for Dinner, Tues., Nov. 28, 2017

I checked out this cookbook from the library called Stir Crazy by Ching-He Huang. The recipe I selected is called Spicy Lemongrass Chicken with Cashews.   In it is ginger, onion, garlic, rice wine, green bell pepper, chicken stock, soy, a little fish sauce, and scallions. 



I have lemongrass growing in my greenhouse. I have had it all of the growing season and haven't used it once, so now I have to go out there and cut it.

Dessert.  Fruitcake (it's really good, honest) that the RG got from the bakery. Orange-spice tea to go with.

2. a ? about lemongrass

Do you use the stem portion or the leaves? I have a spice jar of lemongrass, but it does not say what part it is?

And I'll bet your jar is chopped leaves. However, I have had recipes ask to use only the white part.

The dressing is a lemon greek dressing. All made with fresh lemons from my Meyer lemon tree.

& I made a salad with romaine, carrots, cukes, and minced onions. I have raspberry tea to drink, so I'll likely make a raspberry vinaigrette dressing for the salad.

...which we rarely do! Great local restaurant. I had a grilled tuna burger and hubby had a Kentucky hot brown flatbread pizza

garlic, oregano and then paprika. Served with a red wide-butter sauce. Baked potato and steamed broccoli. The sauce tied it all together. Yummy!

10. More Jambalaya

that was made yesterday.

I made some cornbread from scratch. It turned out different than usual. It rose a lot in the center and took much longer to get done. I used a different corn meal, which was bought to bread fish. It came in a canister. The corn bread holds together much better than my usual but has a less of a corn taste and a denser texture. It's good, just different.
