you've had me thinking on enchiladas though.. I sure wish I could get Stokes green chili here, that's what I'm really craving.

Hot mashed potatoes (with horseradish) and a side salad of grapefruit, avocado, blueberry and mint. Lemon sorbet for dessert.

some assorted leftovers. Threw the 7 layer dip together this morning early, except I couldn't find my can of black olives in the pantry cupboard. I just bought them recently, and did NOT use them. They're hiding. However, as the Borg say, "resistance is futile" and they WILL be assimilated into my dip -- otherwise, it's just 6 layer dip, and what is the fun in that?

Was really yummy - my first experience with tempeh. Started with dried black beans for the first time as well - they were just wonderful.

curried baked tilapia, and a homemade turkey orange-lentil soup. It was great, and I have all the leftovers dumped together into the soup pot for a glorious breakfast soup tomorrow.

I don't make it very often because I'm not that crazy about it but DH put in a special request. I put it in the crock pot to simmer for several hours in marinara sauce and served angel hair pasta with it.

Made it a week ago and again tonight. It tasted summery and good in this chilly spring. Romaine, roasted chicken slices, olives, hard-boiled eggs, cucumber slices, grated pecorino, a squeeze of fresh lemon, black pepper, and croutons made with garlic, rosemary, butter, sourdough bread cubes.

Brown sugar blondies with chocolate chips and coconut made for the college boy's care package. Third semester on the dean's list! Zaletti cookies and chocolate dipped apricots made to send to the mom in the family who bore twin girlies on Friday.

Zaletti are Italian rolled cornmeal cookies with currants, orange zest and rum.
