What's for Dinner, Wed., Nov. 8, 2017

Knudels. I hope I spelled that right. It's a German meatball mixed with vegetables which are, I think, pureed first with the immersion blender. They are served in a deep, rich beef broth.

The RG also made green tomato chutney with green cherry tomatoes and baby zucchini squash. Very hot. Baby arugula goes next to the chutney.

For dessert we have apple pie again, and also egg nog ice cream for the top. Some limoncello confections, too. This pie is lasting forever because nobody ever has more than a one-inch slice.

I've put a big pot of white beans on. They are in the last of my ham stock with the usual veggies and chopped up small ham steak.

I am hoping they will be ready before TJ gets up and goes to work.

I'm thinking of making some griddle cakes to go with. Cornmeal and flour pancakes.

here so I made a small pot of red potato soup with a crusty baguette I picked up at Trader Joe's. I slathered it with some real butter and topped my soup with some grated sharp cheddar.

I find it harder and harder to cook for one since my husband passed away last year. I'll probably try to freeze the few cups of soup I have leftover.
