Hi there! Late last year, I lost my job at just about the same time that my husband's restaurant (he is a trained chef) was closing its doors. It was a tough time for us for a few months, but we're both back in the workforce now (the market's a little different in Toronto than in much of the USA now, I think).
However, in our time unemployed, while we were sending off resumes, meeting with recruiters, and waiting for call-backs and interviews, we decided to start our own cooking channel on YouTube. We're doing a video each week, trying to keep it to fairly simple basic stuff and some of our very favourite home-cooked recipes. My husband does all of the cooking and writes all of the recipes, and I do the filming, editing, and voice-over.
He's from Texas, so you'll see a slightly southern and/or creole influence on a few of the recipes!
Anyway, if folks are interested, I'll start posting our weekly video here. Here is this week's: Grilled asparagus!

(3,283 posts)I wish it weren't such a short season. But we eat a lot of it while it's around and plentiful.

(16,296 posts)The bacon wrapped grilled stuff looks unappetizing , greasy and overdone. Asparagus is made for quick, flash cooking accentuating its unique taste in salads, pastas or alone with a minimum of competing flavors , IMHO. Grilling does not do it any favors, nor does wrapping it in bacon.

(3,283 posts)It's also fiddly and a pain in the butt to wrap individual stalks of asparagus! But we find it delicious (especially with the hollandaise).
As for the regular grilled asparagus, we actually let it go a little longer than we wanted to for the video (because some other things were happening in the house) so this is a tiny bit more done than we usually do, but it was still crisp in the stalk when served, and of course you can always decide when you think something is "done." We try to focus more on techniques than recipes, letting people decide on cooking times based on when things are done (for instance the wide range of times on the bacon-wrapped option).
I can see this for a party (I love the idea, but my husband hates asparagus). I'll definitely keep this one for company!
