(16,386 posts)I have to make my own to get them like I want them--"over-medium", with the yokes, soft but not quite runny. In restaurants ordering over-medium, either gets you over-easy or over-hard. I know, I know, First-world Problem.

I'll think of doing eggs this way soon; haven't ever taken so much trouble, but they were pretty much 'perfect' when I lived in London for a while, maybe I'll try.

(31,464 posts)Probably why you think restaurants always get it wrong. Over medium means the you flip 'em until the white is cooked firm and the yolk has started to crisp up, but is still mostly runny inside. Great for eating with some crispy corned beef hash (with hot pepper sauce, of course).

Okay, not really, but I will most certainly tell you to take them back and bring me some that are not burned.

(26,116 posts)sprays it, puts his eggs in it. The eggs cook while the skillet heats up. He doesn't get crisp edges.

Omelettes too! My omelettes must be golden brown - not pale yellow.
Just my weird and finicky tastebuds.

But what she does to eggs should be considered a criminal offense and a crime against nature. She puts a nonstick skillet on high heat, adds a pat of butter, and then puts in the beaten eggs and cooks them until they are thoroughly browned. She turns them over, then, and browns the other side well, and then (gack) eats them.
The smell is beyond comprehension. I almost have to leave the house.
