That means I have tons of shrimp and left over grilled chicken.
Ideas? I have about two pounds of boiled shrimp, one of which is going to gumbo, but I'd like to be creative with the other. I have a BUNCH of grilled chicken, and would like to see how creative DUers can get with it in such that it can be served well, but also frozen.
It's a cooking challenge with leftover boiled shrimp and grilled chicken.

It's a great day, but most of what the rest of the world sees is just the debauchery from downtown.

(47,675 posts)Seriously though, what the hell IS that? If involves meat, stop right there. I don't want the recipe. If it's vegetarian, I'm all ears (or eyes in this case).

(11,360 posts)You would need a decently flavorful alternative to andouille sausage, and you could probably substitute something like seitan for the chicken ...
... but it's a dish that is largely focused on corn and tomatoes.

(50,130 posts)In a toasted croissant, with chopped shrimp, avocado, minced celery, minced scallions, some mayo with hot sauce and chopped fresh herbs and a squirt of lemon.

on edit: in reality I would never use frozen shrimp in anything. We can get fresh from the gulf here and I have a great dealer I trust.

* 6 slices firm white bread (Pepperidge Farm is good)
* 1 lb uncooked frozen shrimp , deveined and shelled
* 2 cloves garlic , minced
* 1 tablespoon butter
* 1 tablespoon olive oil
* 1 ½ cups gruyere cheese or 1 ½ cups havarti cheese , shredded
* 1 teaspoon lemon, zest of
* 1 teaspoon dried dill weed
* 1 dash pepper
* ¾ cup mayonnaise
Directions:
Preheat oven to 300°F Using small cookie cutter, cut out four rounds from each slice of bread.
Place on cookie sheet and bake in oven for 10-15 minutes or until bread is crisp and dry, turning bread rounds over once halfway through baking time.
Cool on wire rack.
Heat butter and olive oil in heavy skillet and cook garlic and shrimp just until shrimp curl and turn pink.
Remove from heat and set aside for 10-15 minutes to cool slightly.
