Mardi Gras

That means I have tons of shrimp and left over grilled chicken.

Ideas? I have about two pounds of boiled shrimp, one of which is going to gumbo, but I'd like to be creative with the other. I have a BUNCH of grilled chicken, and would like to see how creative DUers can get with it in such that it can be served well, but also frozen.

It's a cooking challenge with leftover boiled shrimp and grilled chicken.

1. I don't eat seafood anymore. All Mardi Gras means to me is beads and titties.

Frankly, that's all it means to most people - especially the ones who are there.

Most of Mardi Gras is celebrated in groups of families along the very long parade routes.

It's a great day, but most of what the rest of the world sees is just the debauchery from downtown.

6. Does that involve titties?

Seriously though, what the hell IS that? If involves meat, stop right there. I don't want the recipe. If it's vegetarian, I'm all ears (or eyes in this case).

You would need a decently flavorful alternative to andouille sausage, and you could probably substitute something like seitan for the chicken ...

... but it's a dish that is largely focused on corn and tomatoes.

11. Okay, okay, okay. I'll admit it - I LIKE titties - I'm a guy.

To be fair, I like REAL titties (no offense intended to those with reconstructive implants). I'm a guy. We're SUPPOSED to like titties. And just why is it that I'm posting this in the C & B group????

16. Mardi Gras? Titties? Beads? Whatever the purpose (which is religious, curiously)...

... all most people know about it is that women flash their boobs to get beads.

In a toasted croissant, with chopped shrimp, avocado, minced celery, minced scallions, some mayo with hot sauce and chopped fresh herbs and a squirt of lemon.

Two parts shrimp, one part avocado and half as much of the savory stuff together?

That sounds really good.

unfortunately you need raw shrimp to start. Maybe later?

on edit: in reality I would never use frozen shrimp in anything. We can get fresh from the gulf here and I have a great dealer I trust.

* 6 slices firm white bread (Pepperidge Farm is good)
* 1 lb uncooked frozen shrimp , deveined and shelled
* 2 cloves garlic , minced
* 1 tablespoon butter
* 1 tablespoon olive oil
* 1 ½ cups gruyere cheese or 1 ½ cups havarti cheese , shredded
* 1 teaspoon lemon, zest of
* 1 teaspoon dried dill weed
* 1 dash pepper
* ¾ cup mayonnaise

Directions:

Preheat oven to 300°F Using small cookie cutter, cut out four rounds from each slice of bread.

Place on cookie sheet and bake in oven for 10-15 minutes or until bread is crisp and dry, turning bread rounds over once halfway through baking time.

Cool on wire rack.

Heat butter and olive oil in heavy skillet and cook garlic and shrimp just until shrimp curl and turn pink.

Remove from heat and set aside for 10-15 minutes to cool slightly.
