burgers topped with chipotle bacon jam. Caprese salad on the side - got some heirloom tomatoes in the farm share today as well as some nice organic russets...will hand cut some fries and oven bake them with smoked garlic oil.

So on the way to the grocery(cat food!cat litter!! Coffee!!!) I stopped by. Excellent hand made patties, grilled onions, swiss cheese on a mediocre bun. But hey they are new, and the kimchi burger will be next.

3. I made rigatoni with bacon and leeks

in a cream sauce. Fried the bacon and drained all but 2 tbst of the fat. The sliced leeks are sauteed in the remaining bacon fat before the cream and Parmesan is added. Then the rigatoni is added along with the cooked bacon tossed and topped with italian parsley.

The technique of keeping the bacon in the fat was shown to me the other day by the RG. The bacon needs to be kept in the fat or it turns tough.

After he showed me that, I read numerous recipes that used bacon. All of them said to drain the bacon of fat and absorb the remaining fat with paper towels.

And I had wondered why my bacon was always so tough!

on the greasy side just for the flavor. I never gave any thought to how it could be kept tender. In any event my wife loved the dish and I was happy with it. How do you prepare your bacon?
