I had to jump on the line tonight..

..And realized just how much I miss actually *cooking*

Finishing a perfect risotto
Searing a perfect salmon
Grilling a perfect pork chop

Getting back to that moment to moment life of just making perfect food, over and over, not worrying about what we need to order up on for tomorrow, or what we need to prep extra, or who needs what days off on next week's schedule, or any managerial bullshit, and just..

..cooking.

That can be more theraputeic​ than you can ever imagine.

Brought to you by an admittedly drunk sous chef on his train ride home.

That whole article is making me feel inherently uncivilized... If only!

Managing a restaurant always sounded to me wonderfully creative, and awfully stressful. At least Cherche Midi presumably isn't forced to "unthinkable" cutbacks because of rising food prices.
