(2,016 posts)Got some leftover chicken from making a stock. Perfect for enchiladas. I'll throw in some black beans and diced green chilis, too. Garnish with green onions, black olives, queso fresco, cilantro, avocado and whatever is in the fridge that looks Mexican.
ps: As I was shopping this morning, I picked up some pig's ears. (Always like to challange myself with non-standard body parts.) I'll simmer them in some garlic, bay leaves, soy and vinegar for a couple hours. Then tomorrow, I'll fry 'em up crispy! Snack time, baby.

Salad of mixed field greens, carrot slivers, cucumber slices, mushroom slices, and cherry tomatoes with blue cheese crumbles and ranch dressing.
I went to the grocery Sunday and today hoping to find a deal on a spiral cut ham. Not a one to be seen.
