Tortellini soup in chicken broth.
Chicken breast, browned in a cast iron pan. On top, a grilled Poblano. Also melted cheese on top. I'm not sure what kind of cheese yet, but we have a number of interesting ones.
Baked apple with vanilla yogurt for dessert. Chai tea.

(1,706 posts)from "Mad Genius Tips". The book suggests serving with smoked salmon and sour cream. I'm doing regular salmon, and I'm going to try whipping some cottage cheese, probably with a little half and half, and add fresh dill and green onion. Steamed broccoli with lemon for a side, and grapefruit.
Just wanted to add, as long as I'm dropping in, that teaching your kids to cook pays such great benefits. My 23 year old son made us a lovely cheesecake on Valentine's day.
Here's the book the potato waffle recipes is in: https://www.amazon.com/s/ref=nb_sb_ss_i_4_7?url=search-alias%3Dstripbooks&field-keywords=mad+genius+tips+over+90+expert+hacks+and+100+delicious+recipes&sprefix=mad+gen%2Caps%2C221&crid=1IDGMPYGJ8AKL
Awww, that is so lovely that your son made you a cheesecake.
I checked out that cookbook and it has some very interesting tips. There's one about how to cook the bacon so there's bacon in every bite of a BLT. Weave the bacon! Clever. Lots of interesting food combinations, plus it's funny!
There is a sample "look inside" at Cairycat's above link.

(17,483 posts)A grilled half of a chicken breast, with mashed potatoes and steamed broccolini. There was a mustard colored sauce. I am not sure of the seasonings. There was definitely some ginger as well as citrus in the sauce.
Hotel catered food served lukewarm, although a nice presentation.
