What's for Dinner, Sat., Feb. 11, 2017

We’re having these really interesting pork sammiches the RG made. They have pork and prosciutto, plus grilled vegetables like zucchini, peppers, and tomatoes. Farmer’s cheese, too.

And a bowl of pasta with red sauce. It’s papardello and the sauce has a little cream in it, I think.

I'll probably get some take out - but even what type, I still haven't a clue. Spent all day doing house chores, and the last thing I want to do tonight is cook.

But, it will involve a beer .. or four, after I pick it up.

I had a busy day including a visit to the grocery store. I never thought about dinner, so I just had to get a chicken when I walked by the hot box. I swear they spray an appetizing aroma from a hidden nozzle at that case.

I will be eating the limbs of the chicken tonight, something good will become of the rest of it later. Left over veggies from the pork chops last night on the side.

I've just put an 8-1/2 pound pork roast in the crock pot with some onions, garlic and apple cider vinegar under and around it. Seasoned with salt, red pepper flakes, brown sugar, cumin, chili powder and some garlic powder. We are going to have too much pulled pork tomorrow! I've not cooked anything quite this big in the crock pot, so I don't have a good feel for how long it will take. I'll check it at 8 hours, but I'm expecting 10 to 12 will be needed.
