What's for Dinner, Sun., Jan. 8, 2016

We had our pork roast for a late lunch while watching a movie. It was deliciously tender. There were some cannellinis roasted with it, too. For dessert, pear and taleggio cheese. Now that's a match made in heaven. I had it with thyme tea, but it would have been better with wine.

Since this was such a heavy meal, for tonight we will probably have just a salad or perhaps I'll finish up my Spinach Rice casserole.

TJ made the casserole when I was sleeping, Saturday night. It is chicken, noodles, bread crumbs and perhaps cream of some thing or other soup. I'm not detecting any vegetables.

A potato salad as well as a 3-bean salad. Wishing it was picnic weather, eh?
