What's for Dinner, Thurs., Oct. 13, 2016

Meatballs in cabernet marinara sauce.

I’m running a bit short on time, though, so if I can’t get this done, I’ll at least have them started for tomorrow. In that case, I will just have a salad, which is already made, and squash-pear-parsnip soup, to which I may add chipotle.

Last night I grilled broccoli and baby bok choy. It turned out so good! I will do this again. I used olive oil/herb marinade and brushed the vegetables before putting them on the grill. Then I watched them closely. The grilling brings out the sweetness. After getting them just to the right stage, slightly charred, I chopped them and had them with a little hoisin sauce on the side.

Steamed broccoli, and a spud salad (sans boiled eggs). I realized this morning I've been eating 2 eggs a day for the last 2 weeks, so I'm backing off a bit. Time for oatmeal, I guess.



ps: I've had grilled broccoli once, and it was quite good. I think my friend did a soy/olive oil marinade. First time for grilled broccoli. It had a nice chew to it.

they recently changed the guidelines and two a day are OK. Maybe if you Google it, the guidelines will come up.

My dad lowered his cholesterol dramatically by having oat bran in the a.m., but oatmeal is good, too.

Yes, the texture on the broccoli was a real plus. Glad you enjoyed it, too!
