I like to read about cooking, but don't actually like doing it. But I'm being forced into it since I need to adopt a low-carb diet for weight loss.
Most recipes I see online are deliciously high carb like bread and pasta. And I weep for the cakes and cookies that will taste scrumptious only in my imagination.
Finding a source for SIMPLE (because I'm a lousy cook) recipes has been a challenge. Does anyone know of any good websites for easy meals that leave out or minize carbs? Ideally, food that I can prepare on weekends for the rest of the week would be helpful. I'm hoping to make lunch my biggest meal, so it would have to be something i can warm up in the microwave.

(35,675 posts)'Cuz I'm low-carb, too. I don't believe grains are good for you, so that's why I do it.
You can create very good desserts by baking with almond flour. Breads, too! The trouble is, however, that almond flour is very high in calories so you will not be able to eat too much of it. It is way better than wheat bread, though.

(2,302 posts)Dana Carpender has written a bunch of books about cooking this way. She's been a low-carber for a long time and developed some great ideas along the way. Her recipes are wonderful!!! The books are available almost anywhere and she includes lots of great lunches, like hearty salads. You'll also find tons of desserts. Her Cajun Chicken salad would be perfect for you (it's in her first book, 500 Low Carb Recipes).
Her recipe section is a bit hard to navigate on her website. But they look good. I'll have to look at it more closely before deciding if i want the book.

BUT -- since you are not diabetic, why not try the No-S Diet? I follow it and find it easier and easier as I go along, because it allows you any foods, but just gently restricts portions in a very low-key way. There's nothing to buy; just go to the fellow's website below:

If you are already lamenting the loss of bread or potatoes, a low-carb diet will be very hard to stick to. You'll always feel deprived. Take a look at No-S and see if it might be more to your liking. Go to the blog and read what other people say about it.
