What's for Dinner, Sun., May 1 (May Day), 2016

I've been cooking for the last few hours, since it is rainy and cool here. I've made:

--basil-parsley pesto

--asparagus-walnut stir fry with Asian-flavored chicken breast strips

--and I'm hoping to make creamy wild rice chicken soup.

Since today is my "low and slow" day, I went the extra mile and roasted and de-skinned all the chilis (pasilla, Anaheim, serrano and jalapeno), tomatillos, onions and the garlic. Now it's all in the pot with the cubes of pork. Two more hours, and it's eatin' time. Meanwhile, the house smells so awesome - it's killing me.

The waiting...the waiting...

served on linguine and, believe me, it was AWESOME. I was almost ready to bathe in that sauce, but the family wanted to take home some of the leftovers. We also had steamed broccoli, butter beans, and roasted homegrown asparagus. My sister made an apple cake for dessert and it was delicious.
