It's really good. I can never get enough good kale recipes.
I wanted to copy and paste the recipe here, but don't want to break copyright rules. Is posting someone else's recipe, in whole, verboten on the DU?

(60,019 posts)since doing a 28 day vegan challenge diet. Yesterday we had large fresh collard leaves from the farmers market, smeared them with hummus and lots of chopped veggies and made wraps.
I think if you copy and paste the recipe and make a few minor modifications (to customize it, say), you should be fine!

Greens are probably good for you in other ways too. That's why I'm always grateful for good ways to eat 'em!

(32,093 posts)Just go to the "Search marthastewart.com" and type in "kale". It will turn up several pages of recipes. I recommend this one:

You can leave substitute the turkey with chicken, or leave it out altogether, and maybe use a little extra cheese.

(60,019 posts)But probably an encore of the roasted lentil bolognese sauce over pasta and spaghetti squash.
Was quite lovely! (roasting made it easy...and flavorful)!

(35,731 posts)I'm making grilled tofu and squash kebabs. Also tofu with spicy garlic sauce. And a version Gong Bao "Chicken," only I'm using tofu in place of the chicken. Rice to go with, of course.
To serve tomorrow, I'm making tomato sauce today so I can serve fried ravioli to my kitchen renovation team.
I have the day mostly to myself, so I should be able to get this done.

This is really frustrating as I try to buy all my fresh produce and meat at the last minute and have planned all my meals around it.
It kills me to start using it when we are still in 'merica.
Anyway, I plan to make an Asian chicken and eggplant saute with fresh cilantro, basil and lime juice added just before serving.
And for dessert, an orange salad with gingered yogurt.

(32,093 posts)Aldi has some really nice "artisan" lettuce for just over a buck this week. One of the lettuces is a small head of something that looks like it might be Boston lettuce. Perfect for lettuce wraps. I stir-fried some chicken breast, shredded carrot, and a little bit of onion with some sesame oil, black bean and soy sauces, garlic, ginger, and some red pepper. It was pretty good, although it would have been better had I not gotten carried away with the black bean sauce.

(50,130 posts)I thought about doing something British in honor of a TWO hour episode of Downton Abbey on Masterpiece Theater tonight, but thought better of it.
Stir fry with diced cha siu, cashew nuts, fresh spinach, sweet onion, broccoli, red bell pepper, bean sprouts, red cabbage, sesame seeds, grated fresh ginger, garlic, and soy. With some yakisoba noodles for those who can eat carbs. Nearly frozen ginger ale to go with.
Later, lovely Bartlett pears and a square of dark chocolate.
