2. Ceviche and chips

Shrimp and scallops, avocado, tomatoes, onion, jalapenos, etc etc...

Just wanted something cold today.

For an appetizer. Could not believe how delicious it was. After all the seafood was gone, there were the delicious juices to sip on. Heaven.

3. Cole slaw

1 T butter 2 beaten eggs
1 T flour 1/2 pint light cream
1 T sugar 2 T vinegar
1 tsp salt finely chopped cabbage
1 tsp dry mustard
dash pepper

Cream butter with flour, sugar, salt, mustard, pepper. Add beaten eggs. Mix well. Add cream. Heat vinegar, add to the first mixture and cook over medium heat until thick. Cool and mix with cabbage, allowing 1/2 C dressing to 2 C cabbage.

I do enjoy perusing my cookbooks. At last count I had 768 books on my Nook, and 514 were cookbooks
