What's for Dinner, Sun., April 10, 2016

I've been working off and on to make soup for tonight. I have pork sausages in the slow cooker. The rest of the soup calls for garlic broth and broccoli, plus herbs.

I also made up a big container of cantalope and grapes.

I really want to make some almond pancakes with blueberries, but afraid I'll run out of time.

I pulled out the rest of the pot roast from 4 weeks ago, made a pot of mashed potatoes, and sauteed carrots with pearl onions. Also grilled a few zucchini and portobello mushrooms. Tomato, red pepper salad and a loaf of country sourdough bread rounded out the meal. Followed by homemade cookies: Lemon Sweeties and Chocolate Chip.

Oops: forgot to mention the homegrown asparagus, but maybe because it was such slim pickings this week. I usually get enough during the week for the family to enjoy at our weekly Sunday lunch, but there wasn't much this week. Maybe it will start producing in record numbers after this cold snap is over.

And tomorrow it will make for great sandwich material: Whole wheat bread, slab of cold lentil roast, lettuce, mayo, sweet pickle chips.
