Roasted a turkey on Saturday, had hot turkey sandwiches with gravy yesterday, and made a nice turkey broth from the carcass today. Added in some diced carrots and frozen peas. Pulled out a hunk of homemade irish soda bread from the freezer that I'm heating up in the toaster oven to go with it.

Right down to the carcass. I don't know anyone who makes a whole turkey and can't get 3 or 4 meals out of that bird. No wonder Ben Franklin wanted our National bird to be the wild turkey. (Yeah, he liked to eat.)

It's not like I can get quahogs here in the high desert, so I used littlenecks. Expensive per pound, but live clams make all the difference in the broth. This one came out nice. Very "clammy".
