Ham

I bought a small fully-cooked smoked ham--about 2 lbs. at Publix. It was a bit more than I normally pay for ham, but what a difference. The smoking process really brought out the flavor of the ham and it was much better than what I usually end up with.

This brings another thought to mind: I usually buy a butt-end ham because that's what my mother cooked. My SIL always buys a shank ham and IMHO, it is always stringy and way too salty, and it cannot be sliced. I don't really know enough about butchering to understand the difference.

disjointed bone in the shank portion, but what is that large "blob" in the front end of the butt? Is that another bone or part of the internal workings? Wish I was better at Anatomy & Physiology!!

a bone in ham. Always go for the butt one, because I think it's more flavorful and has more meat. I heat it in the oven, boil potatoes and usually corn, and have a meal or two with that. Then I have a meal or three where I pan fry slices of ham and fry the leftover boiled potatoes.

Then I start in on scalloped potatoes and ham which I could practically live on full time.

My most recent ham was about three weeks ago, and I did the above. Then I made a ham and bean soup and currently have several portions of that frozen. I've also frozen three portions of ham to make scalloped ham and potatoes, and I'm going to make one of those in a day or two.

Life is good if you have ham.

Q: What is eternity?

A: Two people and a ham!

I like ham, too, but don't like having as many leftovers since I am mainly cooking vegetarian meals now with the exception of Sunday when the whole family comes over. I will eat a couple of slices of it and freeze the rest for when the family can help me finish it.

Ham/potato combined in almost any recipe is delicious. I wish my sister would still eat a bit of ham so I could make a decent bean soup or season the field peas with it, esp. smoked ham.
