I vacuum freeze so it tastes like I just made it but better. Heat a little flat bread and have a great feast.

topped with a scoop and a half of chocolate chip cookie dough ice cream. I prefer plain vanilla, but that was what was in the freezer.

Is it healthy? No, it is not.
Do I care? Not so much..

Lazy night, slight allergic headache that this is unlikely to help, but again, not in a caring mood about such things. Some Friday nights are like that.

We were out and about in the afternoon and stopped at our favorite Mexican spot for $4 happy hour tostada colorado. Happy hour prices are hard to resist -- $2 for ice tea and $4 for the tostada, for me. Delicious. Later -- about 6 -- I had two big glasses of V-8 juice and some almonds. That was dinner.

I'm thinking of having a V-8 meal more often. Why cook when there's V-8 in the fridge? If I lived on V-8 maybe I could have a bit of butter pecan ice cream occasionally. Eh?

but I substitute a smoothie for a similar experience. Or just a glass of juice, a handful of almonds or pinenuts and a sliver of cheese.

Then there are those nights when to hell with the healthy stuff...There's a pint of ice cream hidden in the freezer from my teenager. She has not found it yet... yes! Okay, I'll throw in a banana for some nutritive value...just the thing for an 'I don't give a flip' night.

and green beans cooked in bacon grease. I ate sooooo much, and yet still, after dinner when the husband was in the basement and I was all alone in the kitchen, I licked the pan I cooked the bacon in.

Most of the leftovers are finished. I was hungry for pasta which really hit the spot.
