Dinner tonight, Mexican themed buffet.

Six people, family & friend. I have a little bit of several things and thought I'd serve it buffet style.

Texas Red, tamales, venison fajitas (w onions & bell peppers), guacamole, pico de gallo, salsa (red and green) and green salad. Both flour and corn tortillas as well as chips for dipping. Might add chicken tortilla soup as well.

Haven't planned a desert yet, will probably involve ice cream, and need inspiration for a TexMex type salad dressing. Any help out there?

here's 3 that would work IMHO

1 cup sour cream
2 tablespoons milk
1 tablespoon brown sugar
1 tablespoon cider vinegar
1/2 teaspoon ground mustard
1/4 teaspoon salt


or:

1 teaspoon salt
1 teaspoon sugar
1?8; teaspoon paprika
1 tablespoon lemon juice
2 tablespoons vinegar
1 cup sour cream
Directions:

Stir together salt, sugar, and paprika with lemon juice and vinegar until salt and sugar are dissolved.

Whisk in sour cream, blending until smooth


or:



1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon sugar
1/8 teaspoon paprika
juice of 1 lemon
2 tablespoons vinegar
1 cup sour cream
1/8 teaspoon pepper

How to make it

Place mustard, salt, sugar, paprika and pepper together in bowl then mix well.
Add lemon juice and vinegar.
When mixture is perfectly smooth put in cream and stir will.
Set in refrigerator until needed.

Mexican is my favorite, favorite food. I looked for a salad dressing recipe and found this at Cook's (with posters recommendation):

Mexican Salad Dressing

1 med. onion, chopped in blender
2/3 c. sugar
1 tsp. salt
1/2 tsp. pepper
1 tsp. celery seed
3 tsp. prepared mustard
1/3 c. vinegar
1 c. Mazola oil

Mix all ingredients well in blender and store in refrigerator. This is the best sweet sour salad dressing I ever tasted.

Buttermilk or yogurt based would be good.

I put sourcream in my guacamole.
