Egg salad gribiche on pumpernickel with smoked salmon and julienned endive. Or: if you don't like smoked salmon and endive, go for sliced avocado and tomato.
6 large eggs, hard-boiled
2 teaspoons Dijon mustard
5 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon kosher salt, plus more as needed
1/4 teaspoon freshly ground black pepper, plus more as needed
1/2 cup finely chopped cornichons
1 tablespoon finely chopped brine-packed capers
1 tablespoon finely chopped fresh tarragon
1 tablespoon finely chopped fresh Italian parsley
1 teaspoon finely chopped fresh
INSTRUCTIONS
1Peel the eggs, halve, and separate the whites from the yolks.
2Place the egg yolks in a medium bowl and mash until they resemble cornmeal (some pea-size pieces will remain). Add the mustard and continue mashing until it is well incorporated.
3Add the oil to the yolks, pouring in a thin, steady stream while constantly whisking to form a paste. Stir in the vinegar, salt, and pepper.
4Finely chop the egg whites and add them to the yolk paste. Add the remaining ingredients and fold everything together until evenly combined. Taste and season with additional salt and pepper as needed

(14,733 posts)Cause I gotta say, that seems far too... complex... for a guy like Bernie.
He strikes me as more one of those Depression-era food eaters. Pack in the calories as cheaply as possible, and get them eaten as quickly as possible so you can get back to work.

(35,722 posts)evaluated ways to do hardboiled eggs, and I will try to post the details when I find the magazine, which is somewhere in this mass of publications in my house. They show how to peel 6 eggs in 41 seconds. Pretty amazing. They explain the science behind it, too, so it's really interesting.

Get a NordicWare made in the US microwave egg boiler. Something about that cooking process makes eggs easy as anything to peel. Plus you don't have to watch a pot to prevent boil overs. I bought that several years ago and have not made hardboiled eggs on the stove since.
