3/4 pound scallops
1 leak, chopped
1-2 cloves garlic, minced
Black pepper to taste
1/2 c dry white wine
1 c chicken stock
1/2 pound spaghetti, cooked
Directions
Saute leek for 5 to 10 minutes over medium heat in a bit of olive oil. Then add garlic and cook and additional minute or two. Add white wine and chicken stock, black pepper, and cook until it's reduced by about half. Meanwhile, cook the pasta. In a separate pan, sear the scallops for a couple minutes. Then add to the leek mixture, fold in the spaghetti, and serve with parmesan cheese.

My days of buying bushels of scallops off the boat and shucking them myself are over, alas. I'll have to see if Costco has them frozen.
Leeks I can get.
