What's for Dinner, Thurs., Feb. 4, 2015

Zucchini Mushroom Soup with Pasta. It also has peas in it. I'm also adding a chicken breast.

I was fantasizing about this when I was going through the 'frig and found some pasta the RG had made. I was trying to think of a way to use it, and this is what my taste buds told me they wanted. Here's the recipe I turned up in my research:

and I am beat … working 6 days straight .. so today is my half day off
(I work nights so I sleep half a day.)
so we have having chinese take out
probably having singapore chow mei fun ..

2. Chicken chow mein

using the remaining items from yesterday's soup. (I needed the chix to help make the stock, now I have 3 boiled thighs unused.) Chow mein with tons of celery, bamboo shoots and water chestnuts, served over crunchy mein noodles. Sauce of chix stock, oyster sauce, garlic and cornstarch. I'll throw in any leftover veggies I might have in the fridge, too. (Might have some broccoli and mushrooms laying around.)

That should appease my Cantonese cravings for a while.

I may add sautéed mushrooms as well. But that may be overkill on the flavors.

My daughter's stopping by with her boyfriend, so I thought Id make something special.

4. Oven roasted vegetables

basically, any random or scrap of veggie in the fridge or otherwise that can tossed in olive oil and salt and baked. Top with a fried egg and/or a dash of Chipotle Tabasco and it's very tasty.

tossed with olive oil, salt and pepper and a little garlic powder. Not bad at all.

cheese on top. Baked in oven. Citrus, kale salad.

I went all out. What I ended up with was a confused stew. There is such a thing as combining too many different veggies. It wasn't bad, but at least now I know what not to use.

One veg I never used in anything before was parsnips along with the aromatics at the beginning. I'm not sure what it did for the stew because, like I said, I used too many veggies.

I bought some last month, and am still wondering why I did - especially since it was 4 bucks for what amounted to one pound of white carrots.

They are OK veggies, but hardly worth the money. Never again.
