Buy a rotisseri chicken at the store, a can of enchilada sauce (red or green), corn tortillas, and cheese. heat up the sauce in a pan on low. Pull the chicken from the bone. Dip the tortillas in the sauce for a few seconds till warm and soft, lay it in a backing dish (9x13), add some chicken, some cheese (other stuff if you want) and roll it up and repeat. pour remaining sauce over the enchilads, sprinkle with cheese and bake.
edited for bad key strokes.

(10,136 posts)there are a few things I'm a purist about, and enchiladas - literally "en-chilied" stuff - is one of them. Dip the corn tortillas in a chili sauce (Trader Joe's has a decent enchilada sauce), fill them or not depending on taste, bake and eat. No cream of anything, no slathering with cheese, please.
If you want to make a casserole with flour tortillas and chicken, go ahead. It's just not enchiladas.
