Ingredients
5 beets cooked and chopped
1 large potato, chopped
1 carrot, pealed and chopped
1 small can chopped/diced tomatoes
1/2 green pepper, chopped
1/2 red pepper, chopped
1 onion, chopped
3-4 T fresh dill
Juice of 1/2 lemon
1 box (32 oz.) beef stock
2-3 cups water
Directions
Boil the beets until soft. Peel, coarsely chop and set aside. In a large pot, saute the onion in a bit of olive oil until tender. Then add the rest of the vegetables, except the tomatoes, and cook until they're soft. Add the broth, lemon juice, beets, dill, 3 cups of water and simmer, covered, for at least an hour. When the vegetables are soft, use a hand blender and puree the soup and continue cooking for 5 minutes or so. Serve with chopped dill and sour cream.

(20,234 posts)My local market has beets on sale 29¢/lb this week; between that and your post, I feel like the beet gods are sending me signs. I'm used to having it fermented a bit, but this sounds like less hassle, and the pureeing at the end was a surprise to me, but I think I'd like that.

(42,770 posts)Half Polish. Never heard of putting peppers in. Other than that - pretty similar to the way I make it. But use vinegar instead of lemon. And, always start by sauteing a pork roast of some kind. That's the way my grandma made it. It falls apart and you put brown mustard on it when serving with the soup. Good Rye bread with good butter. Best meal ever.

(6,133 posts)That is all I remember, except the taste of beets. I always thought of making it. And when listening to progressive radio lately, they push some beet pill and how it is so good for you. I use kale for the same reason, in places like soups and stews, because it is healthy.
I think instead of the beet pill, or whatever it is, I will try making borscht.
