Have any of you ever made frosted sugar cookies with Splenda? Would like to a make a sugar-free variation for the adults in the family this year.

(16,334 posts)my father in law was diabetic and I tried several recipes with Splenda but they weren't that great. The only thing that did work was a brownie made with Splenda.
Good luck and let me know if you find success as I would love to copy.

(35,673 posts)It's for Valentine's Day, but the dough won't care if you cut it in the shape of a Xmas tree or a bell:

3 cups blanched almond flour
½ teaspoon celtic sea salt
¼ teaspoon baking soda
1 pinch ground nutmeg
½ cup coconut oil, melted
¼ cup honey
1 tablespoon orange zest
Instructions
In a large bowl combine almond flour, salt, baking soda, and nutmeg
In a smaller bowl, mix together coconut oil, honey, and orange zest
Mix wet ingredients into dry
Separate dough into 2 balls and place each on a piece of parchment paper
Cover each ball of dough with another piece of parchment paper and roll out to ¼ inch thickness
Place in freezer for 30 minutes
Use heart shaped cookie cutters to cut out cookies
Bake at 350° for 5-7 minutes
Cool and serve
I make my own almond flour--much easier and less expensive, too. Just pulse it in the blender until you get it the way you want. If you've never worked with almond flour before, take a look at it when you go to the grocery store. You'll see the consistency.
If you do make it yourself, get almonds with no husk on the outside. Almond flour cookies are far more delicious than cookies made with wheat flour.
