What's for Dinner, Fri., Nov. 27, 2015

Even though it's a nice day here (61), I'm so in the mood for soup, so I took some tomato-based vegetable soup out of the freezer that the RG made. I also thawed some pasta fagioli, for which I have a craving. I have the best parmesan to grate over the top!

In addition, mesclun for a salad, and red wine that will go wonderfully with the dinner.

For dessert, I have roasted pears. I also have some lavender, and I'm thinking about how I can make a yogurt or sour cream topping using the lavender.

We didn't fix the traditional turkey dinner, so I'll be very interested in hearing what everyone's doing with their leftovers.

1. Leftover turkey in sandwich form with onion cheese.

Which pretty much was the same as lunch and breakfast.

Housemate didn't care for the turkey we got from the barbecue place - we both thought it tasted different than when we'd gotten turkey there before in sandwiches. So I'm on 'clean-up duty' to eat up the rest of it, although I did also take about a third of it over to the parents' house yesterday before I found out I would be eating the rest solo. We gave tiny bits to the dogs, but not very much, because the dog we lost this last January had pancreatic attacks, and one past Thanksgiving night (and the next day) spent with him at the emergency clinic was enough to convince me we didn't want that happening again with the other dogs. I finished off the stuffing leftovers at lunch, so the only other thing we've still got in leftover form is the cauliflower with white Vermont cheddar.

The outside lights are up, the inside tree was already up and decorated, and we're not alone, several houses on the street have lights up now. Lots of folks seem to want to be wrapped in the holiday spirit to try and drown out the rest of the world.

relish, and tomato salad. I did put most of the leftovers in the freezer, including the turkey and the turkey stock. I am planning to make 2 kinds of enchiladas on Sunday. Turkey enchiladas verdes and red enchiladas using left over roast beef for the filling.

I made Curried Roasted Cauliflower Soup today and it is awesome. Couldn't find any decent turnips in the stores and mine are still about the size of radishes so I hated to pull them. Instead, I used about 1/2 small rutabaga that was sweet and very fresh. I also used some that wonderful turkey stock, couple of potatoes, 1/2 can unsweetened coconut milk, onions, curry spices, and the roasted cauliflower.
