Chorizo lentil soup

Ingredients
1 pound bulk chorizo
2 C green lentils, rinsed
3 carrots diced
7 C water
1/3 cup dry sherry
2 T paprika
3 cloves garlic, minced
1 onion, chopped

Directions
In a large soup pot, sauce the onion, garlic, and carrots in a bit of olive oil until they're soft--about 25 minutes. Add the paprika and cook it a minute or two. While the vegetables are cooking, brown the chorizo in a skillet. Set aside. Add water to the vegetables along with the lentils and sherry and simmer until lentils are soft--roughly 30 minutes. Then add chorizo, cook for 5 minutes and serve.
