Creamed spinach with Bailey's Coffee Creamer

Since I discovered this stuff I've become quite addicted...



So, last night I'm making creamed spinach and added this to the roux instead of milk or cream. Wow-- good stuff!

Had the caramel flavor opened, but imagine most of the other flavors would work as well, and I'm taking a mess of it to Thanksgiving dinner.

Very, very simple...

10 lbs spinach (frozen cause it's cheap)

2 sticks butter and flour enough to make a roux (maybe more if needed)

Enough Baileys to make a decent cream base

salt&pepper to taste and add whatever other herbs you like

Maybe a little grated cheese to taste (I'll have to find out how cheese works with the Bailey's)

walnuts and cranberries make nice additions

for the butter to get lost in and everything is easily adjustable for taste and health needs.

Besides, since when is this the season for losing weight?

Which is why I'm on my exercise bike... Oh, I wish I'd started a bit sooner after THIS recipe appeared!
