What's for Dinner, Sun., Oct. 4, 2015

Union meeting today, so a buffet around noon or 1.

Afterwards, I'm meeting friends at a diner, but will only have a cup of coffee. Diner food:

Late tonight, a turkey burger with cheese and worcestershire sauce. I put it on lettuce and add a slice of tomato. So good.

so I am thinking of just broth with some rice in it for me.

I had planned a big brunch out with a friend but it got cancelled. Boo.

I haven't been to a diner in ages, but I think I like the food!

We eat at least once a week at a place that is in an old Dairy Queen bldg. In Texas, these places are called a "meat and three", that is to say, a daily menu that offers a plate lunch consisting of a meat with three vegetables. Generally served with homemade rolls and cornbread.

Our favorite place has some good food, big glasses of iced tea with lots of ice and a slice of fresh lemon plus the best coconut cream pie ever. Thursday is my favorite day to go, they have butter beans on the menu.

we have a few of those places too but we go to them very rarely now. I loved that cornbread!

Mu oldest son loves Waffle House or Ihop. I feel like I can make myself a better breakfast at home but this is a treat for him, so I don't mind. And once, just once, I had one of the best salads I ever ate at a Waffle House. I was so impressed I became one of those people who takes a picture of their food! (But I did not share it on social media!) Alas, the order was never repeated. Many places don't have enough lettuce for a salad.

chicken breasts with a glaze/sauce using catalina dressing, whole cranberry jelly, and some third ingredient which eludes me atm, I believe.
(ETA: two other ingredients - pecans and powdered onion soup mix.)

Mouse Wars continues, the casualty count on the mouse side is up to 10 dead, 1 injured, while on my side of the conflict I sliced a finger open while moving the washing machine to clean behind and under it and the dryer. I have got to figure out where the little buggers are getting into the house and seal it off.

4. Hearty beef stew

I went to bed last night thinking it was time for a linguini pescatore on Sunday. Yet, I woke up craving beef stew. Funny how that happens.

Beef has been simmering for a couple of hours now, in a few minutes it'll be time to add the veggies.

It was cool this morning.. little warmer this afternoon, 72 degrees in Ohio...So, making hearty ham and bean soup, Great Northern beans were soaked overnight in preparation. Low and slow, cooked beans on stovetop in chicken stock, onions, Bay leaves, dry herbs, ....later, added water, diced carrots and smoked ham neckbones...continue to go slowly until beans soft and tender. Remove bones, preseason and add salt as desired..add diced ham and a can of white canollini beans for more bean bite...

Served with buttermilk cornbread, in a cast iron - bacon dripping/ seasoned skillet ...

But I'm making chile con queso for watching the Clownboys lose.

My version of Torchy's Tacos queso that is like crack-you can't stop eating it.

Asadero cheese
A little sharp Cheddar
Chopped tomatoes and green chiles
A little milk to thin it
And Torchy's Diablo Sause.

sounds so good. FarPoint really got me with the description of that cast iron pan shortbread. Mmmmm.

Our union meeting had a pretty good buffet. There was both chicken and filet mignon. And they served both--you didn't have to ask for some of each. For vegetables, roasted squash and mushrooms, penne with vodka sauce, rice pilaf. There was a big tossed salad and a basket of different kinds of rolls, including cinnamon raisin, cornbread, and a few others. Earlier, when we first arrived, there was a nice cracker and cheese spread with fruit.

Dessert was brownies, both a blonde type and chocolate. There were assorted cookies. A couple berry crumbles. Coffee, tea, and the usual.

If it weren't for the fact that every week this society finds a new way to screw teachers over, I'd be a happy camper tonight.
