Made a Cream Cake today

I was looking for a recipe to try on the internet and saw several recipes for cream cakes. A cream cake doesn't have butter in it, instead it uses cream as the liquid and the fat from the cream is supposed to be the fat in the cake.

Not sure where I got my recipe, maybe taste of home. anyway, it had good reviews and it appealed to me because I would not have to cream the butter with the sugar as in a regular 1,2,3 cake and I had some cream in the fridge that I needed to use. The reviews said it had a moist, dense crumb like a pound cake and that was true. I added vanilla and a little lemon extract to the batter.

It was very easy to make and looked great out of the oven, but the taste was blah, nothing there. My husband said the same thing. We decided it was because the butter taste was missing.

whipped cream or ice cream to dump on top of it, cream cake is good. Alone, meh.

... that was quite good. It works better when you have something else (like those nuts) that's strongly flavored in it.

I served with homemade vanilla ice cream and fresh strawberries. I put a thin glaze made of powder sugar mixed with a little milk on the cake while it was still warm. We have since eaten more of the cake and on the second day, the flavor improved, but I still missed that butter goodness. What I will say is that the texture was good, like a pound cake and it was so easy to make. I baked it in a glass baking dish.

Simple Cream Cake
Ingredients

2 eggs
3/4 cup white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup heavy whipping cream

Directions
1.Preheat oven to 350 degrees . Grease a 9x9-inch square pan.
2.Beat eggs in a small bowl until very thick. Add the sugar and the vanilla, beating well.
3.Combine the flour, baking powder, and salt. Add the flour mixture in three parts, alternating with the whipping cream, mixing until combined. Pour the batter into the prepared pan.
4.Bake in preheated oven until a toothpick inserted near the center comes out clean, 30 to 40 minutes.
