I'm thinking of using a leftover 1/2 cuke to make a "cusabi" dressing (cucumber-wasabi). I had it once at a casino restaurant, and loved it - but never tried to make it. To me, it was like a like a light ranch dressing, but with the cuke and the wasabi in your face. I'll use sour cream and a splash of 1/2-1/2 as a base and see what happens.
(No buttermilk nor yogurt on hand.)
