made with left over New York strip steak marinated with lemon juice and onions and then stir-fried. Add butter lettuce, shredded cheese and sour cream on a gently toasted tortilla, the hot sauce you choose, and it is a freaking amazing way to use left over steak.

It becomes it's own gourmet meal before you toss it.

Working with leftovers seems to be a skill that many either do not possess, or don't exploit to their best advantage.

Same here - leftover steak always seems to make it into fajitas in my kitchen. It's an easy way to get 2 meals out of one steak.

Organic grass fed ground beef that Mr. Dixie cooked up to make a hellacious taco filling last night
is having an encore appearance tonight ( he cooked a LOT of it)
than later I will put on a slow cooker pot roast from the same beef for tomorrow night.

I've got a 1/4 head of savoy cabbage and a couple of carrots which I'll dump into the soup. Some dried shiitakes will make that plunge too. I froze 1/2 of the last batch of wontons I made, so it'll be an easy and tasty meal. The wontons are pork and shrimp filled. The broth? I have 1/2 qt of beef broth and 1/2 qt of chicken stock.

Not a bad way to use up the fridge stragglers!

I'm mostly kidding, because that sounds absolutely delicious and I didn't think of making it that way.

Do you make your own won ton wrappers or do you buy them?

I think it's been 15 years since I last made mine. It was so much work that I've been recovering since then.

No way - I buy pre-made wrappers for less than 2 bucks. Making wontons is already a labor-intensive process... why make it more complex?

We've gotten back to our usual summer weather system - marine layer mornings, sunny mild afternoons. So a 400 degree bake & broil was due. Got tired of cold dishes...

11. dinner meeting

Our department head treated us to dinner this week, so we had a meeting and everyone enjoyed the buffet. Again, we dined in the atrium, which is such a beautiful spot.

The chicken was really, really good. It was simple, but cooked just to the right degree. Golden brown, with herbs. Roasted.

Surprisingly, the cole slaw was quite delicious, too.

I act surprised because this is, after all, "corporate dining." I would feel lucky if it was edible, so when it's actually delicious, I'm overwhelmed!
