Grated cauliflower that you use just like cooked rice.

(17,047 posts)The whole cauliflower-starch-replacement thing to me is not pleasing.
I love cauliflower steamed or stir fried. I tried to bake pizza dough with it once and it was awful. I've also tried the "skinny" mashed potatoes and it was gross. I guess I'm not doing it right!
I tried cauliflower rice and ummm, well, the leftovers turned green in the refrigerator. Never again. It's not you; I think it's a lousy idea.
As far as pizza crust goes, though, the zucchini is far better for a no-wheat crust than cauliflower.
In regard to rice, it might be worthwhile to try that low-carb cook approach to rice. It was posted here awhile back. If I can find it, I'll post it again.

(54,256 posts)Just grated raw cauliflower and substituted that for cooked rice in the recipe.

(29,098 posts)I process it in rice like bits then stir fry it with minced onion and celery. Add what ever extras like egg and soy sauce. It's really quite good when you add the other veg.
