What's for dinner? ~ Monday, July 13, 2015

I figured I'd give the usual suspects a break in starting today's thread.

I've got lamb cubes marinating in the fridge, and I'll skewer them up for the grill. With zucchini, tomatoes, mushrooms and onion. A rice pilaf should round it out.

candied walnut and chocolate chip brownies for dessert. i also need to throw together some tabbouleh and hummus for husband's lunches this week.

as home made hummus being less than spectacular. Bad hummus is better than many things, let alone GOOD hummus.

I love it on pita bread.

i put roasted garlic and bell pepper in mine and he loves it.

he doesn't have access to a fridge or microwave at work and pitas hold up pretty well in the cooler bag, so he gets a lot of those.

that is better than mashed potatoes?

I think not. I usually make a pot of red beans and rice, but I just wanted the gooey, delightful feel that potatoes have.

I added celery to the pot (essential for red beans to retain that vegetable/floral character we all love).

Ladled the beans over the mashed potatoes. Had some thick, hearty bread to go with it.

Beans and potatoes can be a meal to die for - cheap, delicious, and on good bread, excellent calories per dollar.

I missed the memo, so I didn't know the department was treating us to dinner tonight! All of the teachers, the tutors, and the department head and the coordinator of the summer program had dinner together in the atrium. This university has a beautiful campus and I have long admired the atrium from the street whenever I would pass by. So there I was, dining in this atrium tonight, and it was all a surprise.

I had nachos as an appetizer, and then I had roast beef, mashed potatoes (a no-no on my law carb diet), and tortellini salad. For dessert, it was vanilla soft-serve ice cream.

Everything was good except for the guac. You'd have thought they put pureed peas in it!

the whole package of 6 bratwursts.

So, tonight I did some of Dr. Praeger's veggie burgers that were on sale. Since I'm not vegan, I found out how good they are with bacon. And cheese. (Do they still count?)

Still hungry, I had some golden beets lying around so made mashed beets-- just like you make mashed potatoes. Yummy-- later I'm hitting the farm stands to get more beets.

Munchies just hit again, so mashed turnips are the thing in the wee hours.

Luv those farm stands...

I think I'd drizzle a little sesame oil over those beets, plus sea salt and pepper. Yum! I never thought of mashing beets. Parsnips, yes, turnips, yes.

Now, the bratwurst wouldn't even be so bad, but I'll bet the salt content was high.

adobo, cumin, a pinch of chipotle... My hand hovered over the soy sauce bottle for a second but that might be a bit much. You're right that naked root vegetables can always be helped along.

Salt isn't one of my worries since I use so little in my own cooking, but factory made sausages just have to be generally bad for you.
