My favorite spring and summer dish is a casserole made with a creamy cheese sauce and summer herbs and adding any parboiled vegetables that you can raise or buy locally: asparagus, spinach, green beans, green onions, zucchini, crooked neck squash, carrots, peas, green and red pepper, sweet corn, eggplant or... Top with bread crumbs, french fried onions or almonds and bake.

This is quite an incentive for me to finish cleaning out my refrigerator. I can't wait to try some new dishes.

The baked asparagus frittata and the radish salad recipes are on my list.

I'd bought some chicken thighs (bone in and with skin) and was thinking something along the lines of a creamy, whole grain mustard sauce and mushrooms. Got to thinking something a little less creamy would be better for spring and ended up making this instead (with the skins peeled off):

for the whole grain mustard sauce, but figured this was lighter fair for the weather. And it was good.
