We'll be having leftovers most of the week. I tasted the sauce again this morning and, as usual, it's ever so much better now that it's had time for all the flavors to fully develop and meld.

(146,218 posts)Dinner was great yesterday and it was wonderful to have all cold foods prepared. Never had to even turn on a burner.
Are you pot roasting your beef? I love to do that with star anise, then throw the veggies in at the end to cook in the broth.

My old usual recipe
four cups chicken broth or four cups water and 4 bouillon cubes
2 cups + cooked chicken, chunked
8 oz tomatillo salsa verde
1 cup diced yellow onion
1/2 cup frozen corn
1 can tomatoes -- I used the mexican style chunked tonight and I also threw in some green tomato chunks from the freezer
1 T ground cumin
handful of masa or cornmeal into boiling soup to thicken
two torn up corn tortillas into boiling soup for texture
garnish with sour cream, diced avocado, tortilla strips fried til crispy and drained on paper towel. Wedge of lime if you want it.
Full meal.

(2,016 posts)using the leftover breast from yesterday. With black beans, corn, diced sweet chilis, pico de gallo. Topped with sharp white cheddar and homemade enchilada sauce (rojo).
