Am I ever in the mood for cooking!
Know what gets me in the mood? A trip to Whole Foods, first thing in the morning. There I see a baked apple stuffed with walnuts, cranberries, cheese, and granola: only $8.99 each!
I just look and laugh, thinking I could make that for about $1.24.
I did quite well at Whole Foods today, though, as they are having a sale on chicken legs and I bought a package of 14 for $3.23! I have discovered that I love making chicken soup from the legs because it's so fast and easy to pull the chicken off the bone.
However, I may do these by coating them with mustard and then panko. So simple, yet delicious. I use a spicy mustard. Put them in the oven.
I have a tip to pass on: I noticed that Trader Joe's is now stocking peeled hardboiled eggs at six to a package--from free range hens. Can't recall the price but it was reasonable. I always buy free-range, but have trouble peeling the eggs I make, so I was hoping someone would do this. You do have to use them within one week of opening the package, though. They seem a bit firmer than the ones I make, but they're OK.

(971 posts)So I suggested chili the other day. Cornbread on the side, and an apple crisp for dessert. I'll be leaving on a work trip for a few days, and they'll need something when I'm not around to cook. .I think I'll do the cornbread ln a cast iron pan. Just to get the recipe right for that size skillet.

(20,277 posts)We have enough left for dinner today and tomorrow.
I made it with a layer of sausage, ricotta with chopped chives and roasted red pepper, and a mushroom layer. It has a bechamel/alfredo sauce on top. I put mozzarella in with the sausage and ricotta layers. It was very good, if I do say so myself.

(175,748 posts)I've decided against a salad because my throat is very sore from the cold virus that decided to visit me. Rhubarb pie for dessert.
