What's for Dinner, Tues., Febr. 24, 2015

Salmon-stuffed sweet peppers, using the little ones:



While this isn't exactly a cold-weather dish, I had in my head that I wanted to make it. My inspiration was something I had from the salad bar at Whole Foods. They mixed tomatoes and salmon; it was delicious.

So in my version, I roasted tomatoes. I stuffed the little peppers with flaked salmon-creme fraiche-dill-green onion mixture. I had earlier made the salmon by putting it in the oven with the roasted tomatoes.

I put a bed of roasted tomatoes on the bottom of the plate, and then I put the stuffed peppers on top.

I have to work tonight, so early dinner for me.

tabbouleh, hummus, tzatziki and roasted peppers. i'm still hungry and am thinking about nibbling on one of last night's pork chops.
