A Spur-of-the-Moment Risotto

When it’s 20 degrees and windy in Manhattan, the closest place to shop for dinner is in your cupboard. Even a minimally stocked pantry can provide a comforting spontaneous feast.

You probably have some basic ingredients on hand. Certainly you have onions. No doubt you have rice, maybe even Italian rice. With a little cheese and a handful of bread crumbs, you are well on your way.

I love risotto. A lot of the recipes call for white wine and chicken broth and lots of stirring. I usually put in some kind of squash and will try putting it in the oven in this cold weather.
