Hispanic American Meat Loaf

Ingredients
1/2 c celery, chopped
1 onion, chopped
1/2 c green onion, minced
1/2 c carrot, minced
1/4 c green pepper, chopped
1/2 red pepper, chopped
2 t minced garlic
1/2 black pepper
1 1/2 T cumin
1 t nutmeg
3/4 salsa
2 eggs
2 pounds ground turkey
1 1/2 c dried bread crumbs
1 c green olives, sliced

Directions
Saute celery, onions, carrots, peppers, and garlic until soft. Spoon into a large bowl and let cool a bit. Sprinkle with spices, then add salsa, eggs, and olives and blend. Fold in the turkey meat and bread crumbs and blend well. Grease a cookie sheet and form the meatloaf into a free form loaf, making it wider than tall. Top with a bit more salsa if desired. Bake in a 350° oven for an hour. let cool for 10 minutes before serving.
