Cross-Post from the Lounge for what looks like a great Smoked Pork Butt

But, here's the cut and paste version from MohRokTah:

These were bone out pork butts, so after I did the rub, I had to tie them.

I first do an all purpose rub, then I smear mustard all over the butts and rub in a good barbecue rub.

I then inject the meat with a concoction containing apple juice and worchestershire sauce (and other odds and ends).

My barbecue rub is:

1/2 cup brown sugar
1/2 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon mustard powder
1 teaspoon cayenne

Recipe:

4 tablespoons butter
2 small yellow onions, finely chopped
6 cloves garlic, minced
2 15 oz. can tomato sauce
2/3 cup molasses
2/3 cup dark brown sugar
2/3 cup light agave syrup
1/3 cup honey
1 cup raw sugar
2/3 cup cider vinegar
4 tablespoon yellow mustard
2 tablespoon chili powder
2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper

I'll saute the onions and garlic in the butter, add the rest, and simmer for about two hours. Then I;ll add to the pulled pork butt in a slow cooker and cook on low for about 8 hours.

There's a lot of flavor contained in the meat that connects to the bone and after slow cooking the bone slips right out with no effort.

What exactly (how exactly?) should I ask for pork butt, which I frankly can't distinguish from shoulder!
